"Giardinera" literally means garden. Ours is made with cauliflower, celery, peppers, onions, and carrots.These veggies are lovingly washed, peeled, and cut. We marinate them in fine red wine vinegar, lots of olive oil, tons of fresh oregano, garlic and green olives. It's pickled and covered in olive oil so it could last in your fridge a long time. It's great on sandwiches, pizza, charcuterie boards, in chicken or tuna salad. It's so good with chicken and fish. Once you eat all the veggies, you can use the remaining oil and vinegar as salad dressing, on pasta salad, or as a marinade.


What makes it hot? The addition of Calabrian chilies. A bit spicy.
