Mafaldine is a long ribbon pasta with ruffly edges. It's great for delicate sauces like pesto and cream sauces, but also works well with meat sauces like our Sugo. Cook in salted boiling water for 2-3 minutes. Half of a pound of pasta can easily satisfy a very hungry eater. If there are sides and appetizers, half a pound would feed two. We recommend cooking or freezing the pasta within 5 days of purchase.
