Cavatelli is a type of gnocchi. Gnocchi is commonly made as a potato based dough - ours is not. We add ricotta to our pasta dough to make these luscious and soft shapes. Cavatelli literally means "tiny hollows" and is often compared to the shape of a "canoe" or "hot dog bun". They hold up well in soups and all types of sauces. They pair perfectly with our pestos. You could simply enjoy it by adding olive oil or butter, with grated parmesan and cracked black pepper.
